Ingredients

Burrito's

  • 2 tablespoon olive oil
  • 1 onion
  • 1 zucchini
  • 1 red capsicum
  • 2 carrots
  • 420g can red kidney beans
  • 35g tomato paste
  • 2 tablespoon mexican seasoning, Taco or Moroccan Seasoning can be substituted
  • 2 cup Grated Tasty Cheese
  • 1 package Burrito Wraps

Optional Extras

  • chopped tomatoes
  • Chopped Lettus
  • grated cheese
  • rice
  • Salsa

Recipe's preparation

    Burrito Mix
  1. Add oil, onion, zucchini, red capsicum, and carrot to the TM bowl and dice by hitting turbo a couple of times. Saute vegetables on Counter-clockwise operation"Counter-clockwise operation"  Varoma for 9 minutes on Speed 1

    Use Spatula to push anything stuck to the sides into the bowl. 

    Stir through kidney beans and set to Counter-clockwise operation"Counter-clockwise operation" and cook on 100'c on Speed 1 for 3 Minutes.

    Add spice and tomato paste and stir through on 80'c  on Speed 1 for 3 Minutes

    Add cheese and mix thoroughly until cheese has melted on 80'c on Speed 1 for approx 4 minutes.

    Spread a portion onto a burrito wrap and enjoy on its own or with rice, which adds a nice texture. For a change add fresh salad and cheese to the wrap.

Tip

Burrito wraps can be pre heated in the oven or microwave if desired.

    I made this tonight. It was very easy to make and had a pleasant flavour. As my ten month old was also having it, we only added cumin, paprika and oregano rather than taco seasoning and my husband and I just added grated cheese in our burritos. In the future, we’ll just put some aside for our daughter and add cayenne pepper and chilli powder to our own. If we were to serve it with sour cream, salsa and rice it would easily make six portions and take it up a level too.
