Ingredients

vegan mac and cheese (veganhuggs)

  • 100g raw cashews, soak in boiling water for 15mins
  • 500g macaroni elbows
  • 80g carrots, peeled chopped chunks
  • 260g potato, peeled chopped chunks
  • 150g water
  • 1tsp garlic
  • 1/2tsp paprika, red
  • 1cup Almond milk, or soy unsweetened
  • 40g nutritional yeast
  • 40g lemon juice
  • 20g flour, arrowroot
  • 1tbs stock paste

Recipe's preparation

  1. boil water and cook pasta i did onstove while i prepared the sauce

    add carrots/potato chop 3secs speed 4 scrape down add water /stock and cook for 10mins /100/speed 2
    add garlic/paprila/drained cashews/nutritional yeast and lemon juice and process 1min/speed 9 scrape down if smooth continue add arrowroot and milk process 3secs speed4 to combine then cook 5mins/100/speed 2 taste for salt season if needed

    drain pasta and put in large bowl pour sauce over and stir through .i put some chopped basil ontop

this recipe converted from vegan huggs she used onion powder i did not have but you could add ,

    Best vegan mac and cheese I've had so far. The kids absolutely loved it too, and I love that it was so good for them and full of protein! Highly recommend with vegan parmesan as well.

    Also, used half the "cheese" sauce to make queso dip the next day. It was awesome!!
