Ingredients
sauce
- 2 brown onions peeled 1/4
- 3 cloves garlic, peeled
- 40g olive oil
- 300g water
- 40g vegtable stock edc
- 60g raw cashews
- 1 salt and pepper to taste
- 1tbs thyme spings
- 1tbs Rosemary sprigs
- 1/2tsp paprika ground
- 1 juice one lemon
- 1 cauliflower, approx 800g
filling
- 1 small butternut pumpkin
- 4 Spring onions sliced
- 3 large potatoes, (i had none to i just used sweet and extra pumpkin
- 1 bunch parsley chopped, chop in tm and set aside
- 1 Large Sweet Potato
- 450g green beanstrimmed and chopped into 3cms
- 1cup sliced almonds

I'm cooking this todayRecipe's preparation
put onions in tm and chop 2secs speed5 scrape down and oil and cook 5mins/v/speed2
add chopped garlic cook for 5mins/v//speed 2/no mc
add cashews/ cauliflower/ stock paste/herbs/lemon and water and process for 2-3mins till smooth paste
set aside
grease dish with oil of choice i used ghee
layer thin slices of pumpkin/sprinkle with some spring onions and parsley
add a 1/4 sauce in a thin layer
now put a of layer thinly sliced potato again put a layer sauce and sprinkle with spring onions and parsley
put beans and cover with more sauce and again sprinkle with spring onion and parsley
put final layer of sweet potato and top with last of sauce
cover with foil and bake for 1hours till veg are tender then remove foil and sprinkle almonds and bake till golden 15mins

Tip
they did recommend putting dried onions on top i never had any also chives in layers none in garden

I was excited about this recipe but sadly it was a massive fail - not sure what I'm missing but it wasn't amazing at all. The overwhelming taste was the veg stock and the whole dish was generally quite bland. Only noting this as it takes a decent effort to make and lots of beautiful ingredients and it really let me down.
