Ingredients

  • 2 cloves garlic
  • 1 --- brown onion, peeled & halved
  • 1 --- carrot, roughly chopped
  • 1 --- Capsicum, roughly chopped
  • 2 tablespoons Vegetable Stock Concentrate (EDC)
  • 1-2 cm fresh ginger, peeled
  • 30 g Nuttelex
  • Mixed fresh herbs
  • 500 g chicken breast, diced
  • 1 can Mango in syrup, 425g
  • 300 g Aborio Rice
  • 270 g coconut cream
  • 230 g water
  • Salt & Pepper, to taste

Recipe's preparation

  1. Place fresh herbs, garlic, ginger & onion into TM bowl. Chop for 4 seconds on speed 7

  2. Add nuttelex and saute for 2 minutes at 100°C on speed 1

  3. Add carrots, capsicum & mango and chop for 3 seconds on speed 7

  4. Insert butterfly, add chicken and cook for 5 minutes at 100°C on Counter-clockwise operation"Counter-clockwise operation" +Gentle stir setting"Gentle stir setting"

  5. Add rest of ingredients and cook for 17 minutes at 100°C on Counter-clockwise operation"Counter-clockwise operation" +Gentle stir setting"Gentle stir setting"

  6. Pour into Thermo Server and allow to rest for 5-10 minutes. This assists in the continued absorbtion of liquid by the rice. Serve

Tip

You could also use real mangoes, but probably need to add a little more.

    A good recipe. I used 2 x fresh mangoes instead of tinned and added a little bit more water. I think this would taste awesome with a sprinkling of curry paste or powder.

    Tasty, easy dish enjoyed by the adults in our house. The kids weren't taken by it though, maybe if I left the capsicum out next time they would probably like it.

     

    I used the syrup from the mangoes as part of the liquid as suggested and it worked well.  Thanks for the sharing.

    Hi Kymshep,No I didn't add the syrup (didn't worry too much about straining either though) But I can't see why you couldn't use the syrup instead of water, actually would add to the flavour.
