Ingredients
- 1/4 olive oil, cup
- 4 long rashers rindless bacon, chopped roughly
- 1 red onion, peeled and roughly chopped
- 1 clove garlic fresh, roughly chopped
- 1 teaspoon fresh sage leaves, or 1/4 teaspoon dried
- 100 g white wine
- 1000 g water
- 410 g arborio rice
- salt and pepper to season
- 50 g parmesan cheese cubed
- fresh sage leaves, extra
- 2 teaspoons vegetable stock concentrate
- 440 g canned cannellini beans, rinsed and drained

I'm cooking this todayRecipe's preparation
Mill parmesan cheese in TM bowl for 10 seconds on speed 9. Set aside.
Chop bacon, onion, garlic and sage for 5 seconds on speed 6.
Add oil to TM bowl and sauté for 4 minutes on "Counter-clockwise operation" at 100C on speed 1 with MC off.
Insert butterfly. Add rice and wine to TM bowl and sauté for 2 minutes, "Counter-clockwise operation" at 100C on "Gentle stir setting" .
Add stock and water and cook for 16 minutes, "Counter-clockwise operation" at 100C on "Gentle stir setting" . Place simmering basket on top of TM lid.
Add cannellini beans and seasonings and cook for 4 minutes, "Counter-clockwise operation" at 100C on "Gentle stir setting" . Place simmering basket on top of TM lid.
Place risotto in a serving bowl and stir though parmesan cheese.
