  • 500 g celeriac, peeled, chopped, 2-3 cm cube
  • 1 clove garlic
  • 50 g Butter
  • 1 heaped teaspoon TM vege stock
  • 80 g water/milk/cream

Recipe's preparation

  1. 1. Add cubed potatoe, celeraic and clove of garlic to steamer basket and place in bowl over 500ml of water

    2. Cook 30 min Varoma Gentle stir setting"Gentle stir setting" until vege are soft.  Cooking time will change depending on size of cubed vege, add more water to cook if required.

    3. Remove basked, discard water.  Attach butterfly whisk, add back vege, butter, vege stock and liquid of choice (I made with water).  Whisk 10s, speed 4

Tip

1. Use olive oil to make dairy free

2. adjust liquid depending on type of potatoe e.g. more floury

3. floury potatoe like agria will whip up better

4. I used as puree under a starter of paua fritters, could try with scallops or a vegetable fritter, or could steam a vegetable or nice piece of salmon above in Varoma while potatoe is cooking.

    sounds really good i love Promite, i am really curious about the Blitzing with potato as it goes really gluey. Is that not the case here because of the Celeriac? Big Smile

    Agree this was a great recipe although the consistency when using the butterfly was lumpy and stringy. Removed the butterfly and blitzed 30sec Sp 10 and was great. I also added about 50g grated parmesan and 1 teaspoon of promite (sounds weird but taste is just lovely). Sprinkled paprika on top when serving, looked and tasted sensational.

    DELICIOUS!!! I've made it twice and both times it's been an absolute hit!!

    I blitzed it 10-20 sec speed 10 because my husband doesn't like it lumpy and it was smooth and velvety...soooo nice! Thanks for sharing! tmrc_emoticons.)

    Delicious.  I blitzed it for 30s on Speed 4 - which gave it a lovely velvety consistency.
