- 2 avocado
- 4 kumara
- 6 eggs
- 1 Corn cob
- 10 fresh peas in the pod
- 1/2 red onion
- 100 g mayonnaise
- 2 lemons, juice only

Peel and chop the kumara, place in the varoma dish. Put the eggs in the simmering basket. Add 1000g water to the bowl, put the simmering basket in the bowl, varoma dish on top and cook 20 minutes, varoma, speed 1. Strip the cobs off the corn cob and shell the peas (or use a mix of frozen corn and peas) and place on the varoma tray, add to the varoma to steam for the last 4 minutes.
When the kumara, corn and peas are cooked, transfer them into a big bowl and let cool down. Put the boiled eggs into cold water to stop the yolks turning black, cool down, then shell and quarter. Finely slice the red onion and add to the kumara. Mix the mayonnaise and lemon juice into the vegetables, then arrange the boiled eggs on top.

Quite nice. I used a tin of peas and corn and stirred it through at the end to save time.
