Ingredients

Wonton wrappers

  • 280 g plain flour, I use 00 Italian flour
  • 1 egg
  • 1 tsp salt
  • 140 g tepid water

Wonton filling

  • 500 g Good quality beef mince
  • 20 g fresh ginger
  • 2 cloves garlic
  • 50 g fresh coriander, Including stems and roots
  • 45 g fresh mint, Including stems
  • 30 g soy sauce

Soup

  • 2 tablespoons beef stock concentrate, Made in thermomix
  • 1500 g water
  • 4 leaves Kaffir lime leaves
  • 1 bunch choy sum or bok choy
  • 2 cups bean sprouts
  • 2 spring onions
  • 1 red chilli
  • Mint extra to serve
  • Coriander extra to serve

Recipe's preparation

    Wonton wrappers
  1. Measure flour, water and salt into your thermomix add the egg.

  2. Mix 6 seconds on speed 8 to combine.

  3. Set dial to closed lid. Knead dough for 2 min on Dough mode"Dough mode"

  4. Describe the preparation steps of your recipe

  5. Filling
  6. Chop ginger and garlic for 5 seconds speed 6. Scrap down sides.

  7. Add coriander and mint, chop for 5 seconds speed 6. Scrap down sides and whiz again for 5 seconds. Scrap sides.

  8. Add beef and soy sauce. Counter-clockwise operation"Counter-clockwise operation" 2 mins speed 2.

  9. Place mixture into bowl and set aside.

  10. Soup
  11. Measure in the water, stock concentrate and lime leaves.

  12. Cook soup at 90oC Counter-clockwise operation"Counter-clockwise operation" 8 min speed1.

  13. Wash and chop Choy sum, place in the bottom of the varoma.

  14. Wontons
  15. Cut dough into 4, roll out 1 at a time.

  16. Cut up your rolled out dough to ruffly 2 inch square and place a teaspoon of your beef mix on each square and nip together with your fingers.

  17. Place wontons onto top of varoma.

  18. This makes a lot of wontons. Only half of the wontons will fit on the varoma tray as the wontons are best not to touch. 

  19. Place the varoma onto the thermomix and cook varoma 20 min Counter-clockwise operation"Counter-clockwise operation" speed 2.

  20. To serve
  21. Ruffly chop up the mint and coriander and set aside.

  22. Chop up spring onions on the angle, set aside.

  23.  Finely slice the red chilli into rings and set aside.

  24. Place the steamed Choy sum in the bottom of the bowl, then add 3 to 4 wontons, pour over your soup. Top with a good pinch of bean sprouts, coriander, mint, spring onions and chilli.

Tip

Place the unused wontons on a lined tray in freezer, transfer to a plastic bag for later use.

    I'm so glad you enjoyed it! I found it a little tricky to put what you do in step order without forgetting anything(first time and all). So very pleased that it turned out delicious  tmrc_emoticons.D

    Thanks I thought this was delicious,  very strong flavour with the leaves! Got a little confused with the tine for cooking of soup and steaming wontons so just ended up cooking soup the whole time of steaming wontons and worked very well tmrc_emoticons.)
