Ingredients

Vegetable and Lentil Moroccan Soup

  • 1 brown onion, peeled and halved
  • 40 grams olive oil
  • 1 teaspoon ground ginger
  • 1 teaspoon Ground Coriander
  • 1 teaspoons ground cumin
  • 1 teaspoon ground paprika
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground tumeric
  • 1/4 teaspoon chilli powder
  • 1/4 teaspoon ground nutmeg
  • 1 can chopped tomatos
  • 2 carrots, peeled and diced
  • 1 Suede, peeled and diced
  • 1 turnip, peeled and diced
  • 100 grams red lentils
  • 1 tablespoon TM vegetable stock
  • 750 grams water

Recipe's preparation

    Vegetable and Lentil Moroccan Soup
  1. Place onion in bowl and chop for 5 secs on speed 7. 

    Add oil to bowl and saute for 2 mins, 100C on speed 1. 

    Add spices and cook for 1 min, 100C on speed 1. 

    Add lentils, stock, tomatoes, vegetables and water and cook for 25 mins, 100C on speed 1. 

    Once cooked, blend soup for 1 mins, slowly increasing from speed 1 to speed 8.

    Absolutely delicious, so simple and easy switch of ingredients to whatever you have available (I switched the swede and turnip for sweet potato and celery) just the right ammount of spice, yummm

    Awesome soup. Used carrot parsnip pumpkin as that's what I had and fresh tomatoes that needed using. Added 1 T tom paste. Will be making this again

    This was delicious. I used carrots, sweet potato and butternut pumpkin for the veggie. I mistakingly put a half, rather than a quarter teaspoon of chilli powder! If you like it on the spicy side do it too!

    Made this again and used it as a curry sauce with chicken with cauliflower rice. Yummo!

    Yumm!! Very tasty.
    I used sweet potato instead of suede and replaced canned tomatoes with 2 fresh ones.
    Instead of dicing the hard vegies I chopped in Thermomix after the onions and spices were sauteed 3 seconds speed 5. Then added quartered tomatoes and remaining ingredients. Felt like a chunkier soup so didn't blitz at the end. Turned out a lovely full flavoured soup with plenty of body.

    Really delicious. I used celery instead of turnips and swede as i didnt have any and 2 x 400grm cans of 4 bean mix. It was a lovely consistancy after blending.

    I used Ardmona 410 gram crushed tomatoes. Worked perfectly for my TM31.

    Delicious! I didn't have a swede or turnip on hand when I made this, so substituted with sweet potato. I also used purple carrots and red onions which resulted in a tasty dark magenta colored soup! One thing I really like about this recipe is how quick it actually is to prepare.
