Ingredients
Chicken and rice patties
- 1 carrot, chopped into 4 pieces
- 3 spring onions, chopped into pieces
- 150 grams Tasty cheese, or cheese to your taste
- 200 grams uncooked white rice, I used basmati
- 1 chicken breast
- 900 grams Boiling water
- 3 eggs
- 1 to taste chicken stock paste, I used a dessert spoon

Preheat oven to 200 degrees
Grate carrot and spring onion 4 seconds - speed 5, set aside
Grate cheese 8 seconds - speed 5, set aside - reserving approx 50g to sprinkle on top
Place rice in cooking basket and place into bowl
Add boiling water
Place Chicken in varoma and sit on top of the bowl
Cook for 17 minutes varoma temperature speed 4
Take Varoma off the bowl and carefully lift chicken out
Lift the cooking basket out with the spatula and drain the rice
Empty the hot water from the bowl and rinse with cold water to decrease the temperature of the bowl
Chop the chicken into approx. 3cm cubes and shred 4 seconds - speed 5 reverse
Add all other ingredients, mix for 10 seconds - speed 4 reverse
Take off lid and use the spatula to help combine the ingredients
Replace lid and stir again 5 seconds - speed 4 reverse
Spoon into a greased muffin tin using the reserved cheese to sprinkle on top
Cook for 20 minutes in a 200 degree oven

Let cool for approx. 10 mins before removing from muffin tray

I added sage, thyme and salt. Pretty yummy kids love it cold for school
Great recipe. Thank you I added some fresh thyme, sage, parsley & garlic at the carrot & onion stage.
I feel like I am bucking the trend here but these were not a hit here The muffins were flavourless and needed a good amount of sauce for the adults and the kids are currently eating 2 min noodles lol. I wonder if you were to cook the rice with some flavour if that would help? Great idea htough and I loved trying something new

Great lunchbox snack for the kids
I had left over cooked rice (used 500g) and no chicken on hand. Substituted a tin of tuna for the Chicken and added 1 1/2 TBSp Curry powder and 50g Salad dressing. Very tastey and filling. Would serve wiht dollop of sour cream next time possibly.

These are great! I especially like them cold, they'd make great finger food for summer entertaining.
