Ingredients

Herby Ricotta & Courgette Muffins

  • 300 g courgette
  • 1 bunch Parsley (about 1 cup)
  • 1 bunch Coriander (about 1 cup)
  • 0.5 bunch Chives (about 1/2 cup)
  • 6 piece eggs
  • 160 g sel-fraising flour, (sub wholemeal or gf self-raising flour)
  • 240 g ricotta
  • 65 g pumpkin seeds
  • 1 tsp salt
  • 1 pinch black pepper

Recipe's preparation

  1. Preheat oven to 200 degrees.
    Cut courgette in pieces and place in bowl. 2 sec on speed 5, then another 2 sec until evenly chopped.
    In a clean tea towel squeeze out as much as possible of the water and put to the side.
    Place all the herbs in the bowl and chop 10 sec on speed 8 until chopped. Then add back the courgette, ad the remaining ingredients and mix for 15 seconds on speed 3. Be careful not to overmix.
    Pour into rosegold muffin tray.

    Bake in the oven for 25 minute or until cooked when tested with a skewer.

    makes 12 muffins. Could also be baked in mini loaf tins.

    We weren't too keen on these. Despite all the herbs, they were quite bland and the pumpkin seeds didn't enhance the texture.
