  • 500 g plain flour
  • 1/2 tsp salt
  • 60 g extra virgin olive oil
  • 250 g cold water

Recipe's preparation

    Olive Oil Pastry
  1. Pre-weigh olive oil into the measuring cup and have a cup full (250gm) of cold water pre-measured.

  2. Place flour and salt in the bowl and mix 5 sec, speed 5.

  3. Continue speed 5 and drizzle in oil with blades turning.

  4. Continue speed 5 -add water.

  5. Mix for 10 seconds at speed.

  6. Turn mixture on to Thermomat. It will still be crumbly.

  7. Work mixture into firm ball by hand. This should only take seconds.

  8. Wrap in Thermomat and rest 20 minutes until ready to roll thinly and use.

    I love this pastry! It's beautiful and crunchy/flaky like traditional short crust, but a lot more forgiving to work with. Going to try a sweet version.

    I made this tonight for an egg and bacon pie. It was quick and easy to make and roll. Nice to be able to avoid the butter.
