Ingredients
Spaghetti Sauce
- 1 Small brown onion, chopped in half
- 1 clove of garlic
- 400 g tin of diced tomatoes
- 15 g olive oil
- 1 tablespoon tomato paste
Cupcake Ingredients
- 250 g uncooked spaghetti
- 100 g cheese, cut into cubes
- 4 eggs
- 6 slices ham, cut in half and rolled up

Place the cheese in the TM bowl and grate 4 sec/speed 4. Set aside.
To cook the spaghetti, put 1000g of water in TM bowl, and bring to boil, 8 mins/100 degrees/speed 1. When the water is boiling, remove measuring cup and weigh the 250g of spaghetti directly into the bowl through the hole in lid (it will go down into the bowl itself as it starts to cook). Cook for a further 8 mins/100 degrees/speed 1. Drain the spaghetti into the TM basket and set aside.
Place onion and garlic in TM bowl and chop 5 sec/speed 7. Weigh in 15g olive oil and saute 2 mins/100 degrees/speed 1. Add tin of tomatoes, tomato paste and salt to taste. Cook for 6mins/100 degrees/ speed 1, with the MC out so that the sauce thickens. You may need to place TM basket on top if the sauce splatters when it boils. When finished cooking, put the MC back in and blend 5 secs/speed 5 to make sauce smooth.
To assemble cupcakes, add the eggs and grated cheese into the bowl with the spaghetti sauce. Mix 5 secs/speed 4. Add the drained spaghetti to the bowl. Mix 30 secs/reverse/speed 1. Use tongs to twirl spaghetti mix into silicone cupcake cases. Roll up the ham slices and place in the middle of each cupcake.
To set the cupcakes, place in varoma (using both trays so steam can circulate). Set aside. Clean the thermomix bowl and fill with 1000g water. Heat 8 mins/varoma/speed 2. Place varoma in position and steam the cupcakes for 20 mins/varoma/speed 2.

Tip
These have a frittata type consistency, and are delicious cold. A fun choice for school lunches. Steaming in the varoma, rather than baking these prevents them from becoming dry.
Also a great way to use up leftovers, if you ever have cooked spaghetti or pasta sauce to use up.
