Ingredients

Lemon and blueberry loaf

  • 1 lemon rind
  • 150 g caster sugar
  • 3 eggs
  • 125 g natural yogurt
  • 40 g oil, E.g: Sunflower
  • 230 g plain flour
  • 1 level tbsp baking powder
  • dash vanilla extract
  • 1 package Cottees Instant vanilla pudding, See photo above
  • 125 g blueberries
  • 2 tablespoons flaked almonds
  • icing sugar, To dust
  • whipped cream, To serve, optional

Recipe's preparation

    How to:
  1. Preheat the oven to 170°C/ 160°C FF.
    Grease and line a loaf tin.

    1. Blitz the sugar and lemon rind
    (MC in). Scrape.

    2. Add the eggs, 40secs/sp4

    3. Add the yogurt, oil, flour, baking powder and pudding mix.
    Blend 40secs/sp4. Scrape.

    4. Add the blueberries, (reserve 1 tablespoon for sprinkling on the top). 10secs/Counter-clockwise operation"Counter-clockwise operation" /sp3. Combine further with the spatula if necessary.

    5. Pour/spread into the prepared pan and sprinkle over the reserved blueberries. Sprinkle over the flaked almonds.

    6. Bake for around 50-60mins or until cooked when tested.

    7. Cool in the tin for 10 minutes before cooling on a wire rack.

    8. Dust with icing sugar and serve with a dollop of whipped cream if you like.

Absolutely scrumptious!
Perfect with a hot cuppa.
Freezes well.
