- 350 g lukewarm water
- 1.5 tsp sugar
- 30 g fresh yeast or 2tsp dry/instant yeast
- 620 g spelt flour
- 2 tsp salt
- 2 tsp bread improver
- 15 g olive oil

Add all the ingredients to the TM mixing bowl in the order listed, then mix for 7 seconds, speed 7, once this has been completed knead for 5.30 minutes dough function.
Leave dough to prove for 15 minutes in either the TM bowl, a doughmat or oiled bowl covered in cling wrap.
Transfer dough onto doughmat, oiled or floured bench top and knock out any air.
Shape dough and either transfer into a large loaf tin or for bread rolls onto a lined oven tray.
Place the dough in a warm place to prove (doubled in size), this will take around an hour.
Pre heat your oven to 200 degrees
Cook for 20-25 minutes, loaf should be golden brown in colour and sound hollow when tapped.
Immediately remove from oven and place on a wire rack to cool.
Making the dough
Tip
For making rolls weigh into 80g pieces for small sized rolls or 100g for large rolls, and forn ball shapes, then leave to prove in a lined oven tray.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
