Ingredients

White Gluten free bread

  • 150 g Milk of choice, (I use almond to be dairy free)
  • 150 g water
  • 3 level teaspoons dried instant yeast
  • 10 g sugar
  • 400 g white wings Gluten free flour
  • 2 level teaspoons xantham gum
  • 1 level teaspoons salt
  • 2 eggs
  • 10 g apple cider vinegar
  • 20 g olive oil

Recipe's preparation

    Dough
  1. add water, milk, yeast and sugar to mixer bowl
    2 mins/ 37°C/ speed 2
  2. add 400g white wings gluten free plain flour, 2 teaspoons xantham gum, 1 teaspoon of salt, 2 eggs, 10g apple cider vinegar and 20g olive oil and mix for 20 sec/ speed5
  3. for bread:
    in a lined and oiled small loaf tin using oiled hands scrape dough into tin and flatten as best can. spray or brush with olive oil and allow to prove in a warm place until doubled in size. cook for 25 to 30 mins at 180°C or untill browned and sounds slightly hollow when tapped! cool in tin for 2 minutes then on a wire rack. wait till cool to cut! trust me!
  4. for bread rolls:

    grease a 12 hole muffin tin (silicoln or non stick) squish even amounts of dough into the tin and then spray or brush with olive oil. allow to double in size in warm place and cook at 180°C for 20 minutes or untill slightly browned
