Ingredients
Caramel Sauce
- 215 g raw sugar
- 60 g water
- 80 g Butter
- 1 tsp salt
Coconut Cream Rice Pudding
- 60 g raw sugar
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 250 g arborio rice
- 400 g coconut cream
- 600 g water
- 500 g plums, sliced

Weigh Sugar into Thermomix Bowl. Mill 5 seconds, speed 9. Scrape down the bowl.
Add water to Thermomix bowl. Cook 10 minutes, 98 degrees, speed 1. Ensure you keep the MC in place to help prevent crystallisation.
Cook additional 10 minutes, 115 degrees (or Varoma temp for TM31), speed 1. With MC in place. Keep an eye on the syrup - it should begin to colour but you don't want it to burn.
Add butter and salt. Cook 5 minutes, 115 degrees, speed 1; or until slightly thickened. Keep warm in a 1L Thermoserver.
Add all ingredients (excluding plums) to the Thermomix Bowl.
Mix 10 seconds; "Counter-clockwise operation" Speed 4.
Cook 16 minutes; 90 degrees, "Counter-clockwise operation" speed 1.
Whilst pudding is cooking; thinly slice the plums and place in the bottom of a Thermoserver.
Pour rice pudding over the plums and rest for 5 minutes before serving.
Serve with a swirl of Salted Caramel sauce.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Not sure if I’m sold on this yet... it’s nice, but not creamy enough for me. I’m thinking I might try and substitute the water for another can of coconut cream. Any suggestions would be much appreciated
Delicious! I was after a cream rice recipe using coconut cream and this hit the nail on the head! I didn't actually make the salted caramel sauce but will try it next time. The coconut cream rice was great and my whole family enjoyed it. Thanks for sharing
I made some changes:
instead of Sugar--> used Dates
cooked extra 10 min
added pinch of Salt
and used Cherries instead of Plums!
Left the Caramel Sauce away- as we don't eat sugar.
Yummy lunch box snack for the kiddos!

Delicious! Preferred it cold rather than hot. was tastier cold.
Delicious hot or cold, we made it without plums and used a leftover bottle salted caramel sauce . I agree with Deb, it need an extra 6-9 mins in my TM 5
Best flavour ever, needs 6 min extra cooking time.
Hasn't lasted long enough here to try cold!

Yum! I made this tonight and it was one of the best rice puddings I've had so far. I halved the recipe which gave me 3 very generous servings - probably should have been 4. I also had to cook a little bit longer so maybe I put too much water in but either way a few extra minutes cooking and 5 minutes in the thermoserver was perfect. The sauce is great and I'm looking forward to trying it cold
