Ingredients
Vi's Creamy orange ice cream
- 60 grams unsalted butter
- 6 egg yolks, (about 120g)
- 1 orange zest, grated
- 160 orange juice
- 30 grams glucose syrup
- pinch salt
- 100 grams sugar
- 100 grams sugar, in a separate bowl
- 130 grams full cream milk
- 400 grams pure cream

- Add into the mixing bowl butter, yolk, zest, glucose, orange juice, salt and only 100g of sugar mix 20sec/sp4 mc on
- Scrape down the sides, lid and mc on 5mins/80º/sp3
- Pour the hot liquid through a strainer and into a 2nd clean TM bowl, or into a sepatate bowl discarding any lumps that's collected. Wash and dry mixing bowl if not using a second TM bowl
- Add hot liquid and 100g sugar into TM bowl, lid and mc on mix 20sec/sp2
- scrape down the sides and mix 1min/sp2
- Add cream and milk into TM, lid and MC on mix 20sec/sp4
- Pour ice cream mixture into a shallow container (the orange ice cream should be only about 2cm high, this will help for the next step)
cool for 5/10 minute before putting into freezer.
freeze for 6 to 8 hours - Churning your ice cream
Remove ice cream from freezer and rest on your kitchen bench for 5-10 mins only.... no longer!
Cut your orange ice cream into 2-3cm pieces and add into the TM bowl,
churn for 1min/sp6 mc on (well, I do peek though the hole, it's very exciting)
Repeat if needed, making sure all of the ice cream has been completely churned (blended)
Pour your creamy orange ice cream into a ice cream tub and freeze for minimum of 6 hours before serving.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

This was sooo delicious and dead easy to make. That's what I can't get over! No more buying ice cream. I might try reducing sugar a bit. Was a tad sweet for us. The orange-gorgeous with the perfect amount of flavour.
