- 35 g coconut oil
- 3 eggs
- 1 tsp vanilla essence
- 1 tsp baking soda
- 220g Almond meal or raw almonds
- 40 g Raw Honey

Preheat oven to 180 degrees, grease and line a loaf pan or use a silicone one.
If you need to make your almond meal: add raw almonds to Thermomix bowl and mill on speed 9 for 20 seconds.
Add all ingredients to Thermomix bowl, mix on speed 5 for 10 seconds.
Pour into prepared tin and bake for 25 -35 minutes. Allow to cool.

Pleasantly suprised. I thought it would taste bitty and dense but it comes out very spongy. I had to cook it a bit longer and was still lovely.
Have just made this... yum! Super easy recipe!
I substituted maple syrup for the honey. Also used 2 duck eggs and 1 chicken egg. Sprinkler slivered almonds on top for that little crunch. Served hot with butter 😋
I like how healthy and easy to make it is. Definitely needs more like 45 min to cook.

So good! I added a tablespoon of chia seeds and next time will add some nuts as it's so moist it can take it. Had to cook mine for 50 minutes. 😊
Love this recipe and it will be our go to banana bread recipe from now on. I didn't have any coconut oil so I substituted light olive oil and used a sugar free maple syrup instead of honey. It was delicious!!
Light and fluffy. I doubled it to make work snacks for the week. Topped with chopped walnuts. Yummy.

A family favorite and great alternative to regular banana bread
Such an easy and tasty bread to make. I used up the almond meal left over from my almond milk which is not dehydrated so needed to bake for longer, but it still turned out really well. Thank you for such an easy recipie.
