Raw Peanut Butter Cups
- 160 grams Organic Peanut Butter
- 15 grams Raw Honey
- 40 grams coconut oil
- 15 grams creamed coconut
- 40 grams coconut oil
- 30 grams creamed coconut
- 40 grams Raw Honey
- 10 grams Cacao

Put first 4 ingredients (peanut butter, honey, coconut oil and creamed coconut) into bowl. Mix speed 5 for 10-15 seconds until smooth. Pour into small muffin tins filling only 2/3 of each cup. Freeze while preparing next step.
Top layer.
No need to wash out bowl. Just add next 4 ingredients (coconut oil, creamed coconut, honey and cacao). Mix 1 min/37 degrees/speed 2 or until melted and smooth. Pour over peanut butter layer to fill cup and freeze.
Can remove from tray after 4 hours and store in air tight container in the freezer. Enjoy!!

I used coconut milk in place of creamed coconut and the result was fine. Super delicious and easy to make.
I found coconut cream in the local Healthy Life shop. It is Niulife brand.

What is creamed coconut and can I make it from scratch?
Yummy! Very sweet. One is enough, good for a sweet fix. I halved the honey and replaced with rice malt syrup. I had trouble getting mine out of the pan, could be because I changed the recipe or didn't grease the pan? Will try greasing pan next time.
