- 140 g Biscoff cookies
- 40 g Butter, 3cm cubes
CHEESECAKE
- 250 g cream cheese
- 200 g Biscoff spread
- 250 g cream
- 35 g instant dessert (vanilla)
- 1/2 tsp brown sugar
- 3/4 tsp vanilla essence

- Add biscuits to TM Bowl 10 sec/spd 8
Place in another bowl
Add butter 1 min 30 sec / 65°C / spd 1.5
Add biscuits back into bowl and mix 10 sec / spd 4
Press biscuit mixture evenly into the base of 8 small ramekins or the 120ml glass jars from the Mix Shop, keeping 2 Tbsp aside for sprinkling on top of cheesecakes
Clean and dry mixing bowl. - Add creamcheese to TM bowl and mix 10 sec / spd 4
Scrape down sides of TM bowl
Insert butterfly whisk
Add Biscoff spread and mix 10 sec / spd 3.5
Scrape down sides of TM bowl
Mix 10 sec / spd 3.5
Scrape down sides of TM bowl
Add to another bowl and set aside
Clean & dry mixing bowl - Add cream and instant dessert
No time - Spd 3 - watch through hole in top until soft peaks form.
Fold cream mixture into biscoff mixture gently
Pipe evenly into ramekins or glass jars
Set in fridge for at least 2hrs
Add Caramel on top and then sprinkle on biscuit base set aside.

Tip
I use the Caramel sauce recipe on Cookidoo for the caramel topping, the salted caramel sauce recipe would also work well. Just let it sit to cool and thicken before adding to the top of your cheesecake.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
