Ingredients
Coriander and sweet chilli prawns
- 1 kg green prawns, shelled and deveined
- 1 clove garlic
- 1 small bunch coriander
- 1 handful mint leaves
- 120 grams Teriyaki Sauce
- 60 grams Sweet chilli sauce
- juice of a lime
- 30 grams softened butter

Place garlic, coriander and mint in bowl and chop for 2 seconds on speed 6. Scrape down.
Add teriyaki sauce, sweet chilli sauce, lime juice and butter. Mix for 5 seconds on speed 5.
Pour over prawns in a bowl and allow to marinade for at 30 minutes.
Cook either on barbecue hotplate or in frying pan with the marinade for 3 to 5 minutes or until prawns are cooked through.
Serve immediately with extra lemon wedges if desired

Tip

Very nice with fish fillets
Cooked these for dinner tonight and they were really good and tasty... just had them on their own as finger food without any sides... I didn't have any teriaki sauce so just used coconut aminos and instead of cooking them on the bbq steamed them in the steaming basket. I didn't rinse the bowl out after making the marinade and added some water which I heated for 5 mins varoma 1 then cooked them on varoma 3 mins and then stirred and cooked for another 3 mins....crispy prawns. Next time I would add a chilli in with the garlic and herbs. Simple, tasty, healthy and easy...
Made this for New Years Eve and everyone loved it so have added it to my favourite recipes - great for those hot days when you just want a loght meal
