Ingredients
Spices
- 4 grams ginger
- 10 gram garlic
- 5 grams chilli, dried, adjust to your taste
- 1 tbsp cardamom pods
- 6 whole cloves
- 8 Peppercorn
- 2 bay leaves
- 1/2 piece cinnamon
- 1 tablespoons coriander
- 1 tablespoon cumin seeds
- 1 tablespoon paprika
- 1 tsp salt, stock
Saute Ingredients
- 150 g onion
- 40 g oil
All the rest
- 800 g Lamb, roughly chopped
- 250 g yoghurt
- sprig coriander, optional
- garam masala, optional

- Add all spices to the bowl and chop 4 seconds, speed 6
Dehydrate and place in labelled paper bag, fold and seal.....

.... - Add onion to the bowl and chop for 4 seconds, speed 6.
Add oil and saute for 5 minutes, 120 degrees, speed 2.5 with measuring cup in.
Add spices and cook for 2 minutes; 120 degrees, speed 1 with measuring cup in.
Add yoghurt and blend for a few seconds, then add meat and cook for a further 10 minutes, 90 degrees, speed 1"Counter-clockwise operation" .
Put into a thermoserver while you cook some rice.
Weigh into simmering basket 200g rice and add 1 litre of water. Set time for 20 minutes at 100 degrees on speed 3.
Fluff during and after or as desired.
You'll have time to get the wine!
Adding coriander or garam masala to garnish is a nice finish.
