  • 4 large floury potatoes, 3mm slices
  • 300 g SR flour
  • 1 tsp salt
  • 1/4 tsp pepper, black, ground
  • 1-1.5 cups chilled water, Best results are made with icy cold bubbly Soda water

    How to.
  1. 1. Dust potatoes with extra flour
    2. Add batter ingredients to Closed lid"Closed lid" and blend sp3/ 20 seconds. Transfer to a bowl.
    3. Heat the deep fryer to 180°C.
    4. Dip floured potato slices into thick batter and deep fry, in a deep fryer, until just starting to brown.
    4. Keep going until all done, keeping oil at a steady temperature in between new batches, draining on paper towel in between.
    (They can be frozen at this stage. Defrost and refry or air fry)
