Okonomiyaki

  • besan flour, 1 cup
  • cabbage, 3 packed cups chopped roughly
  • 1 carrot, Chopped roughly
  • 1 zucchini, chopped, Small
  • 1 egg
  • 1/4 red onion, Chopped
  • 1 clove garlic
  • 1/4 water, cup
  • 75 grams Smoked Salmon, cut into thin strips
  • gluten free soy sauce, To serve
  • crème fraiche, To serve

Recipe's preparation

    Pancake
  1. Place cabbage in TM, shred on speed 4 for a few seconds till desired size, remove then add carrot zucchini and repeat.Remove and add onion and garlic and chop 4 seconds speed 7.  Return all vegetables to the bowl and add flour, water, egg and set to Counter-clockwise operation"Counter-clockwise operation" speed 3 for 5 seconds or until combined. Heat a little coconut oil in a nonstick pan on medium heat, spoon in mix and pack down firmly . Top with salmon and Cook for 10 to 15 minutes until nicely browned then spray top with a little rice bran oil on surface and place under the grill for 10 minutes. remove from grill and serve with creme fraiche and drizzle of soy sauce. Serve immediately.

Tip

Can also be served topped with mustard seeds mixed with creme Fraiche and soy sauce as in photo.
