Ingredients
Meatballs
- 100 g Cooked Quinoa
- 375 g ricotta (fresh or tub)
- 3 sprig Parsely
- 1-2 sprig basil
- 60 g blanched or sliced almonds
- 60 g Cashews
- 10 g arrowroot flour
- 10 g olive oil
- salt and peper to taste
Herb Sauce
- 3 sprig parsley
- 1-2 sprig basil
- 40 g sunflower seeds
- 40-50 g olive oil
- 2 clove garlic
- juice of 1 lemon
Zucchini Pasta
- 2 medium zucchini

1. Preheat oven to 200C (180C for fan forced). Line a baking tray with non stick baking paper.
2. Place all meatball ingredients into bowl and mix on spd 6 for 10 secs. Scrape sies and repeat.
3. Roll 1 heaped tablespoon of the mixture into a ball and place on lined baking paper. Repeat until all mixture is used. Drizzle with oil and bake for 25 to 30mins or until golden. Turn twice during cooking.
1. Place all ingredients into bowl and chop on spd 8 for 10 secs. Scrape sides and repeat. Mixture must be mixed well and emulsified.
1. Peel Zucchini into pasta strips (ribbons).
2. The strips can be eated raw or steamed for 5 to 10 mins in varoma.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Yum...very nice...I added more quinoa to the balls to make a little firmer and made the sauce a little more like runny pesto with extra basil, sunflower and water...love the zucchini pasta
