Ingredients

  • 3/4 cup Brown Rice
  • 3 tablespoons parsley
  • 1 carrot, roughly chopped
  • 1 clove garlic
  • 4 spring onions or shallots, roughly chopped
  • 2 eggs
  • 1/2 cup salted peanuts
  • 90 grams Cheddar cheese
  • sea salt
  • coarse wholemeal flour, milled in TMX
  • oil for shallow frying

Recipe's preparation

  1. Soak brown rice in water for 24 hours*.  (The sprouts are good for us.)


    Cook in simmering basket in TMX bowl over 1 litre water.  15 minutes on 100 degrees at speed 2.


    Drain and set aside.


    Dry bowl.  Add 3/4 cup whole wheat grain - mill 10 secs at speed 10.  Set aside. 


    Rinse, cool and dry bowl,  Grate cheese - 5 seconds at speed 7.  Set aside.


    Chop in bowl - parsley, carrot, Spring onions, garlic, peanuts.  Speed 5 for 5 seconds.


    Add eggs, cheese, salt - mix 3 seconds at speed 5.


    Add cooked brown rice and combine gently into vegetable/egg mixture - 20 seconds on reverse/speed 2.


    Take heaped tablespoons full of mixture, coat with wholemeal flour.  Press firmly into round patties. 


    To cook, fry in hot oil in a frypan, or place on a geased tray and bake in hot oven. 


    These go well with salads, on toast with miso sauce poured over, or served with a freshly made tomato sauce.


    * or overnight - the longer you soak, the less cooking time the brown rice requires.

    I slightly changed the ingredients... I didn't have any spring onion or peanuts so I used red cabbage and cashews...

     

    They were so yummy! I can't wait to prepare them to my father...a vegetarian since 1973!

    What a great recipe for those looking for a meat free meal Ros! Nuts, eggs and cheese for protein replacement and lots of fibre and goodness from the vegies and brown rice. I haven't tried them yet but they sound delicious and can imagine they go well with your serving suggestions. Thanks for sharing!tmrc_emoticons.)
