Ingredients

1/2 brown onion cut in 4

  • .5 brown onion, cut into 4
  • 1 clove garlic, peeled
  • 3 sprigs parsley
  • 20-30 grams light olive oil
  • 450 grams arborio rice
  • 4 rashers rindless bacon, cut into 1 cm pieces
  • 2 level teaspoon Vegetable stock paste, or to taste depending on how salty yours is
  • 1100 grams water
  • 450 grams chicken breast or thigh, large dice, 3-4 cm pieces
  • 100 grams frozen peas, about 1/2 cup
  • 50 grams Grated Parmesan Cheese, OR grate before starting
  • 100 gram white wine if using, if using add with rice and bacon

Recipe's preparation

  1. In the bowl add the onion, garlic and parsley, chop 3 seconds, speed 7, scrape down the sides of the jug, add the oil, cook on varoma, speed 1, 3 minutes.

  2.  

    Scrape down the jug, add the rice and bacon, cook 2 minutes, 100, speed 2

  3.  

    Scrape down the jug. Add the stock paste and water, cook 5 minutes, Counter-clockwise operation"Counter-clockwise operation" , speed 2, 100 degrees

  4.  

    Add the chicken, replace the measuring cup with insert basket, cook 15 minutes, Counter-clockwise operation"Counter-clockwise operation" , speed 2, 100 degrees.

  5.  

    Pour the peas into the measuring cup hole, cook 2 minutes, Counter-clockwise operation"Counter-clockwise operation" , speed 2, 100 degrees

  6. Tip risotto into thermo server, stir through the Parmesan, pop on the lid and let it sit for a few minutes.

     

    If wanted, you can add 100 mls of white wine with the arborio rice and bacon.

    Not a huge fan.. too gluggy for my liking but i didn't add the wine as i didnt read it until the end 😔 taste is ok though.

    Hi, I'm a new TM5 user and have had great results with most recipes but sadly this was not the case here. I followed the recipe exactly but the result was a gloopy inedible mass - entirely inedible and went in the bin.... Why would that have happened? It's my first attempt at a risotto in the TM and Im really disappointed - it was like glue! My family loves risotto and I thought the TM would be able to reliably make a good one !! please help!,,,

    I'm going to try this. If I don't have any wine do I add more water or just leave it out all together?

    Easy and yum, kids don't like peas so sub'ed with fresh corn off the cob, popped in at the same time as the chicken, still held its crunch. Kids adored this, they want me to make it every night! Had heaps of liquid,MIT bubbled over...has that happened to anyone else?
