Ingredients
Risotto
- 1 clove garlic
- 1 brown onion
- 1 sprig Continental Parsley
- 60 grams coconut oil
- 320 grams Aborio Rice
- 20 grams apple cider vinegar
- 1-2 tablespoons TM stock concentrate, vegetable stock
- 800 grams water
- 250-300 grams Mixed mushrooms, Enokie, portabello, shitake, button, flat, oyter
- 100 grams baby spinach
- 1 pinch Himalayan salt
- to taste black pepper
- 3 tablespoons Nutritional Yeast (optional)

Place onion, garlic and parsley into the TM bowl and chop for 3-4 seconds on speed 5.
Scrape down sides of the bowl with spatuala and add coconut oil. Cook for 3 mins/Varoma/"Counter-clockwise operation" speed 1.5
Add rice and apple cider vinegar with 60grams of water. Cook 2 mins/100 degrees/"Counter-clockwise operation" speed 1.5 without the MC on.
Add TM Stock, mushrooms and water. Cook for 12 mins/100 degrees/"Counter-clockwise operation" speed 1.5 with the MC on.
The risotto will be quite liquidy. Pour it into the thermoserver and mix through salt, pepper and baby spinach. If you would like a cheesy taste mix through nutritional yeast or simply sprinkle it on top when serving. This is completely optional. It still tastes great with out it.

This can work with just one type of mushroom. If you do choose to try a selection of mushrooms take note of the different flavour combination and adjust to your palate.

I made this last night, delicious! I don't have a thermosaver yet, so I sat it in a saucepan with the lid on for 5 minutes after stirring in the baby spinach, yeast flakes, salt & pepper. All liquid was absorbed. My husband really enjoyed it, and he is a mushroom connoisseur!
I just made this without yeast and with button mushrooms as im not much of a mushroom person and its a great basic risotto recipe. It was really runny so i popped it back on for 5mins without MC to reduce the liquid.
I will be trying this, it's looks like my kind of meal....
