Ingredients

Salad

  • 250g quinoa, rinsed
  • 100g Pepitas Seeds
  • 3 spring onions
  • 1 clove garlic
  • 1 red chilli, or to taste
  • 1 red capsicum
  • 150g Semi sundried tomatoes, drained
  • 50g fresh basil
  • 60g EVOO (extra virgin olive oil)
  • salt & peper, to taste
  • 1-2 limes juice only

Recipe's preparation

    Salad
  1. Place 500g water into the TM jug & place quinoa into the varoma, cook for 20 mins Varoma temperature, speed 3. You may need to stir it part way through. While it is cooking heat the oven to 180 degrees & place pepitas onto a baking tray for about 5 mins until slightly brown. 

    Allow cooked quinoa to cool completely.

    Add garlic, chilli & spring onions to the TM bowl & chopp 3 secs speed 7. Add basil & red capsicum quaters & chop for 3 secs speed 5. Add all remaining ingredients including cooled quinoa & pepitas & mix for 5 secs Counter-clockwise operation"Counter-clockwise operation" speed 3.

    This is a really nice salad, thanks for sharing. I ended up doing it the old fashioned way - stove top for the quinoa and chopping ingredients by hand, but I have to say it wasn't much effort and well worth the time. A really nice deviation from the common lettuce heavy salad. Thanks tmrc_emoticons.)

    Yum! I just made this in my TM5 in the steamer basket and cooked it for another 10 minutes and chopped everything up and added to the quinoa and seeds hot and served it. Yummo! Thanks for sharing!Big Smile

    Yum!!!  My husband and I LOVED this!  I found that it is a bit risky to rely on the Thermomix to chop up the chilli pepper small enough without leaving a big chunk, so I will chop this up with a knife in the future.  I don't want to kill a family member or friend if they get a big chunk!  If anyone has any other suggestions, I'm welcome to them!

    Nom Nom Nom! Love this salad, I added 1/2 & 1/2 basil/ coriander & some beetroot & spinach leaves. Making again tonight, thanks for sharing this great recipe

    This may be a really silly question but if you put the quinoa in the varoma, won't it just fall through the hole?

    This is a staple at all BBQ's I go to. There is something about telling people it is Quinoa, especially after SO many people are apposed to it. After they try it the look on their face is great! How can something so healthy be so delicious! Way to go. I leave out the sundried toms as hubby hates them. Thanks again tmrc_emoticons.)
