Ingredients
1 onion
- 1 onion, halved
- 20 g olive oil
- 3 sticks Celery, roughly chopped
- 2 carrots, roughly chopped
- vegetables from the fridge: eg Pumpkin, brocolli, zucchini, whatever you have, roughly chopped
- 100 g red lentils
- 1 heaped tablespoon vegetable stock concentrate
- water to cover

Chop onion for 3 seconds on Speed 7. Scrape down the sides, add olive oil and saute for 2 minutes 30 seconds at Varoma Temp, Speed 1.
Add vegetables, lentils, stock and water to cover.
Cook for 20 minutes, 100 Deg, Speed 1.
Blend for 1 minute, slowly going up to Speed 9.
Add cracked pepper, herbs, sour cream or whatever you like to taste.
This is a quick and easy recipe to use up what is in the fridge.
Tip
Add dried or fresh herbs and spices to taste. Great to freeze.

I use this recipe all the time- love the flexibility and that it saves throwing out vegies at the end of the week. A good, healthy choice!

Easy and yummy
Perfect! I knew I had some veg and decided on soup for an easy dinner.. Found this recipe and managed to make minor adjustments in the 'anything goes' section- added an aubergine and a red pepper with some thickened cream at then end.. Worked out great, and helped me clear my fridge!!

Yum! I just made some of this, but with what I had without going shopping. I didn't have any celery or beans, I used pumpkin, potato, sweet potato, carrot and swede, and it's delicious. I'm even hoping those in my family who don't like my usual vege soup will like this one because it is blended. Thank you for the inspiration, and I love the name of it!
