Ingredients
- 1/2 medium red Onion, (halved)
- 3 clove garlic
- 1 Large carrot, (roughly chopped)
- 1 Medium Sweet Potato, (diced)
- 20 g coconut oil
- 1 small zucchini (180g), (diced)
- 1 medium eggplant (220g), (diced)
- 1 can diced tomatoes
- 2 teaspoon Oregano dried
- 2 teaspoon basil dried
- 1.5 tablespoon vegetable stock
- 500 g water
- 1 can kidney beans (drained and rinsed)
- Salt & pepper to taste

1. Place onion and garlic into bowl and chop on spd 5 for 3 secs.
2. Add carrot and chop on spd 5 for 2 secs.
3. Add sweet potato and oil, then saute for 5 mins, 100C, Reverse on spd 1.
4. Add zucchini, eggplant, tomatoes, stock, water, oregano, basil, salt and pepper. Mix on Reverse on spd 2.5 for 3 secs to mix through.
5. Cookfor 10 mins, 100C, Reverse on spd 1.5.
6. Add beans and cook for a further 5 mins, Reverse, 100C on spd 1.5.
7. Serve with fresh basil.
8. Enjoy with bread or top with fresh feta cheese.
Tip
*Can add a hint of chilli if you like some heat.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Made this today. I tossed some sliced celery with the other vegies, and a bunch of Italian parsley when the kidney beans went in, and also cooked up about 90g of pasta on the stove top (no room left in Thermy, as I had a bit extra of everything, LOL). Having it for dinner, it's delightful. Thankyou.

This is really nice! I used EVO instead of coconut oil and it was still delicious
