Ingredients
Soup
- 1 brown onion, medium, peeled and quartered
- 3 cloves garlic, peeled
- 1 red chilli, halved, and deseeded (optional)
- 1 3cm knob ginger, peeled
- 2 tablespoon oil
- 3 Limes, fine zest and juice
- 2 tablespoon fish sauce
- 1 tablespoon paprika
- 2 cans coconut cream, 240ml each
- 1 bunch bok choy, washed and sliced
- 2 tablespoons Coconut sugar
- 1 tablespoon dried turmeric
- 2 carrots, peeled and sliced
- 1 small head of brocolli, cut into small florets
- 800 grams prawn flesh
- 2 packages slim/konjac noodles, or rice noodles soaked in boiling water till soft
- coriander leaf, to serve
- Fried shallots, to serve

Place onion, garlic, ginger, chilli into TM bowl. Chop for 5 secs, speed 7.
Add oil and cook for 5 mins, Varoma temp, speed 1.
Add lime juice and zest, fish sauce, paprika and cook for 5 mins, Varoma temp speed 3.
Add coconut cream, coconut sugar and turmeric. Top up bowl to just under the 2L mark with water. Cook for 10 mins, varoma temp, speed 2.
Meanwhile, fill the varoma dish with the carrots, brocolli and bok choy, and place the prawns on the Varoma tray.
Place the Varoma in place and cook for 8-10 mins, Varoma temp speed 3, or till prawns are cooked.
Meanwhile, rinse slim noodles and place in a large bowl.
Add prawns, vege and broth to the bowl.
Serve and garnish with coriander leaves and fried shallots.
Tip
This is a very versatile recipe. Swap the prawns for chicken or fish, add more spice, change the slim noodles for rice noodles. A great tasty meal to suit a large family. Yummy, warming and flu/cold fighting!

I found this completely tasteless and too watery. It needs some curry spices for flavour.
could you mix all veges with soup to hide them for those fussy eaters???
Halved the recipe, used barramundi, didn't have cocounut sugar so used rapadura. Oh my what a kick that delivers. Very nice tho, and didn't use the chilli either.

My kids have had the flu for about a week last night i was looking for some soups and came across this one (my husband HATES SOUP),This one was soooo delish! i loved it we all ate it and loved me, my husband, 4 yr ds, 2 yr dd and 8mth ds. Def would make again im so sad we didnt have left overs ,Next time id add more brocolli, more prawns and maybe some fish Best soup EVER!
Needed a vegan recipe with prawns and something that could use up some rice noodles so this was it! (Prawns though technically not vegan are fine for us) I realised later that it had fish sauce so left it out for hubby and added it in the end for me. I love that it's got lots of good stuff in it and it actually is warming! The recipe took about 15 mins longer. I think it should say Speed 3 when you start cooking the full soup, as Speed 2 was only just starting to heat up the Varoma - either that or cook for a longer time. I added an extra 7 mins for prawns to cook. I used coconut milk instead of cream as that's all I had but it would've been better with cream. 3 limes was too much but mine were very juicy. I would only add 1 next time and add extra at the end, when serving, if necessary. Once all cooked properly, quite a nice soup.
Thanks for this recipe. I modified it a bit (used fish instead of prawns and used coconut milk instead of cream), but it was absolutely delicious.
