Salmon quiche
- 125 g Butter
- 150 g plain flour
- 140 g cottage cheese
- 1 onion, thinly sliced
- 210g can Red or Pink Salmon, drained, deboned and flaked
- 50 g Fresh Baby Spinach, washed
- 150 g Sliced Brie
- 3 eggs
- 3/4 cup cream
- s & p to taste
- 1/2 cup Grated Tasty Cheese

- 1. Melt the butter 2min/60°C/sp2, or until melted.
2. Add the flour and cottage cheese.
3. Blend 20secs/sp4. It will be a very soft dough.
4. Wrap in clingwrap and place in the fridge for an hour to firm up slightly.
5. Preheat the oven to 200°C, and grease a 23cm pie/quiche dish.
6. Press the dough into the base and slightly up the sides of the prepared dish.
7. Cover evenly with the Brie, salmon, onion and spinach.
8. Beat the eggs and cream in a small jug, adding salt and pepper to taste.
9. Pour evenly over the salmon base and sprinkle with the cheese.
10. Bake at 200°C for 10 mins, then reduce the temperature to 180°C and cook for a further 30-35 mins, or until cooked.

Absolutely delicious, either hot or cold, served alongside a crisp garden salad.

A favourite with us and a number of guests. I used a cottage cheese with onion and herbs in it. We also used fresh Tasmanian Smoked Salmon.
