Ingredients

Clone of Zucchini Slice

  • 200 grams Cheddar cheese
  • 400 grams zucchini, roughly chopped
  • 1 onion, large, quartered
  • 300 grams bacon, roughly chopped
  • 8 eggs
  • 240 gram can sweet corn kernels, (drained)
  • 4 heaped tablespoons Coconut Flour
  • 100 grams light flavoured Extra Virgin Olive oil
  • salt to taste
  • pepper to taste

Recipe's preparation

  1. Line 12 hole muffin tray with paper liners.

    Cube cheddar cheese, place in the TM bowl and grate on 10 secs / speed 6. Set aside.

    Place zucchini in the TM bowl and chop on speed 5 for 8 seconds. Set aside with cheese.

    Place onion and bacon in the TM bowl and chop on speed 5 for 5 seconds.[/b] (I prefer to chop my bacon by hand and then add to the chopped onion)

    Sautee onion and bacon for 3 min set to VaromeMC off Counter-clockwise operation"Counter-clockwise operation"


    Add coconut flour, GF Baking powder, oil, eggs and salt/pepper to the TM bowl and mix on speed 4 for 20 seconds.

    Return cheese, zucchini, onion and bacon to the TM bowl and combine all ingredients on speed 3 for 30-40 seconds on reverse.

    Place heaped tablespoons of the mixture into the prepared muffin holes and bake in a pre-heated moderate oven for approximately 20 minutes or until golden brown on top.

    Serve warm (or cold!) with salad for lunch or a couple for breakfast.

Tip

I make double batches of these and store on freezer in a ziplock bag, they make for a quick and tasty emergency breakfast or lunch, just microwave to defrost and heat & go!!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
