Multi-Purpose Dough

  • 1 1/2 tablespoon yeast dry
  • 120 grams milk (luke warm)
  • 500 grams flour plain
  • 1 teaspoon sugar (I use brown)
  • 1 1/2 teaspoon Baking Powder.
  • 1 teaspoon bread improver (not necessary)
  • 1 1/2 teaspoon salt
  • 185 grams plain yogurt
  • 1 egg
  • 2 tablespoon olive oil

    Multi-Purpose Dough
  1. This multi- purpose dough you can keep in the fridge and pull a piece off to use in your next meal! You can use it to make pizza bases, focaccia, dinner rolls and even scrolls.

     

    Method

    1. In a bowl mix yeast into milk until well combined, and leave to sit for 5-10 minutes until it becomes frothy, which means the yeast is activated

    2. Place flour, sugar, baking powder and salt in the bowl mix 30 sec speed 4 to combine

    3. With the thermie running speed 3 slowly add the yoghurt, eggs, olive oil and then milk mixture, until combined into a dough

    4. Knead for 6 minutes. If your dough is a little dry, you can add some more milk or water or if it’s too sticky add more flour

    5. Let dough rest for 20 minutes or so until the dough rises and expands. You can use the dough immediately or place into the fridge to use within 7 days

Notes

For focaccia, roll out the required portion and bake in a preheated 180°C oven for 20 minutes. For pizza, roll out a round base and top with tomato sauce and favourite toppings. Bake in a preheated oven at 180°C for 15-20 minutes, depends on thickness of the base.

For rolls, knead and roll equal-sized balls and place together on a tray. Bake in a preheated oven at 180°C for 15-20 minutes.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
