Ingredients

Bacon, leek and mushroom pies: Filling

  • 75 g Butter, chopped
  • 200 g sliced mushrooms
  • 150 g sliced bacon or ham
  • 1 leek, washed and sliced, or 2 spring onions
  • 45 g plain flour
  • 125 g Milk
  • 25 g cheese, Parmesan, grated
  • 30 g Tasty cheese, Grated
  • 2 tablespoons Dried parsley, or chopped fresh
  • 1/2 tsp granulated garlic, or 1 tspn chopped, fresh

pastry

  • 4-6 sheets ready-made puff pastry, thawed
  • 2 tablespoons Milk, for glazing

    How to filling:
  1. Add the first 4 ingredients to the bowlClosed lid"Closed lid" and cook 100°C/ 5 mins/Gentle stir setting"Gentle stir setting" /Counter-clockwise operation"Counter-clockwise operation"

    Add the flour and cook 100°C/ 2 mins/Gentle stir setting"Gentle stir setting" /Counter-clockwise operation"Counter-clockwise operation"

    Add remaining ingredients and cook 100°C/5mins/Gentle stir setting"Gentle stir setting" /Counter-clockwise operation"Counter-clockwise operation" or until mixture thickens.
  2. Assembly:
  3. Place pie sized rounds of pastry into your piemaker or pie dishes, cover with pastry, brush with milk and cook until golden.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     This was an awesome recipe. I used a mixture of button mushrooms, shitake, baby king oyster and straw mushrooms.

    Absolutely delicious.
