  • 1 can lentils, drained and rinsed
  • 3 eggs
  • 200g feta ,cubed
  • 1 heaped tablespoon soy sauce
  • 60g breadcrumbs
  • 100g oats
  • 2 carrots
  • 1 zucchini
  • 200g Button Mushrroms
  • 4-5 sheets puff pastry sheets
  • 1 egg beaten

Recipe's preparation

    Vegetarian Sausage Rolls
  1. Preheat Oven to 180 degrees

    Lay frozen puff pastry sheets out on the bench to defrost while you chop the ingredients.

    Add Onion and herbs to thermomix bowl chop 5 sec sp 7 mc on.

    Add eggs, feta, soy sauce, breadcrumbs, oats, carrots, zucchini, and mushrooms. Chop 15 secs sp 6 mc on.

    Cut defrosted puff pasrty sheets down so they are rectangle in shape

    Spoon mixture into the rectangle puff pastry and roll up, cut into 4 portions and place onto baking tray. Repeat with remaining mixture

    Brush with reserved beaten egg

    Bake for 20 min or untill golden brown

    These were the best, enjoyed by everyone in the house-vego and meat eaters, teens and adults.
    i added more breadcrumbs than asked for because i thought the mixture was too wet. i dont think it made the mixture much thicker but they came out pefectly so likely that wasn't needed
    highly recommend giving these a go

    Very tasty. My mixture was very wet - possibly due to using fresh breadcrumbs as that was on hand. Added 120g in total. Worked out well after cooking. Will make again.

    Delicious! I used 6 sheets of puff pastry making 48 mini sausage rolls in total. As per the last post, I added lentils after chopping everything else up and mixed for another few seconds. Not at all oily like traditional sausage rolls using sausage meat. Plenty left over for the freezer!

    This made a lot of rolls and was quite tasty  I wasn't sure when the lentils were to be added so I included them after the second chop and just mixed them in.

    This recipe is AMAZING, taste just like "normal" meat Sausage Rolls!! Huge hit in our house!!
