Ingredients

  • 800 grams zucchini, 3 large
  • 1 onion, medium halved
  • 90 grams Tasty cheese, grated
  • 120 grams Self Raising Flour
  • 1 teaspoon Vegetable stock paste
  • 40 grams extra virgin olive oil
  • 20 grams parmesan
  • 4 eggs
  • Salt and pepper, to taste

Recipe's preparation

  1. Preheat oven 180cGrease and line tray approx 19 x 29-cm slice tin. Can use mini muffin tins if you prefer.

  2. Place parmesan in bowl and grate for 10 seconds on speed 9.  

  3. Set aside.Place zucchini in bowl and grate for 4 seconds on speed 5.  Using spatula scrape down sides of bowl and repeat for 2 seconds at a time if necessary.

  4. Turn out onto simmer basket with bowl underneath and squeeze the grated zucchini to remove any excess liquid.  Set aside. (Save the liquid to use in stock, pasta or hide in desserts for kids.

  5. Place onion in bowl and chop for 3 seconds on speed 5.

  6. Add all ingredients and combine Counter-clockwise operation"Counter-clockwise operation" , 20 seconds speed 3.Scrape down the sides with spatula and combine Counter-clockwise operation"Counter-clockwise operation" , 20 seconds speed 3.

  7. Bake for approximate 45-50 minutes. Allow to cool and cut into squares.

Tip

Great for children's lunch boxes, picnics or brunch.

Can add fresh herbs such as chives or basil for a really tasty adult version.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     Lovely light slice.   I added parsley and dill and also added a sweet potato (chopped it up very early in the recipe) as I only had one zucchini.  Worked really well.   Thank you.

    I cooked the onion (5 mins Veroma) with some garlic and spring onions, then stirred in the rest of the ingredients. Delicious!

    I made this today and it was the first time I've ever made zucchini slice. YUM! Loved it and it will certainly be added to the regular rota.
