Ingredients

make 1 loaf

  • 70 g coconut oil, melted
  • 4 very ripe bananas, mashed
  • 4 eggs
  • 75 g Coconut Flour
  • 1 tsp vanilla extract
  • 1 1/2 tsp cinnamon
  • 1 1/2 tsp baking soda

Recipe's preparation

  1. Preheat oven to 175'C

     

    Melt coconut oil into TM bowl, 1 min/ 70'C/ Speed 1

    Add Bananas and Eggs, mix Speed 4/ Speed 2

    Add the rest of the ingredients mix on Interval SpeedDough mode"Dough mode" / 20 secs until combined.

    Optional add in 50g dark chocolate chips/ cacao nibs

    Pour into greased bread pan and bake for 40 - 50 mins.

     

Tip

*Your bananas should be extremely brown, almost to the point when you would throw them away or freeze them. If they are not overly ripe, your bread will not be as sweet and probably not taste as good. If you are using non-ripe bananas, you should add about a 1/3 cup of maple syrup to the batter.

    Made this today for the first time and I love it!  Nicest grain, dairy and sugar free banana bread I've tasted and will be one of my breakfast staples.  Also very easy to make. Thank you so much for posting.
