Ingredients

Beef Satay

  • 2 cloves garlic
  • 1 onion, quartered
  • 1 stalks lemon grass., white part only
  • 2 tablespoons brown sugar
  • 1 large lemon, juice of
  • 2 tablespoons tamarind pulp concentrate
  • 800 g rump steak cut into 2.5 cm cubes
  • 2 tablespoon soy sauce

Peanut sauce

  • 250 g unsalted peanuts
  • 80 g peanut oil
  • 3 cloves garlic
  • 1 Long Red Chilli, seeds removed
  • 2 tablespoons tamarind pulp concentrate
  • 75 g brown sugar
  • 270 g coconut milk

Recipe's preparation

    Beef Satay
  1. Place garlic, onion and lemon grass in bowl and chop for 5 seconds on speed 7.  Scrape down and repeat again if necessary to ensure lemon grass is well chopped

    Add sugar, lemon juice, soy sauce and tamarind.  Mix for 5 seconds on speed 5.

    Pour over beef in a bowl and allow to marinade for at least 1 hour or overnight.  Soak 12 bamboo skewers in water for at least 30 minutes and then strain beef and thread onto skewers.  Cook for on barbecue or grill for 1 – 2 minutes, turning, until lightly charred for medium rare or until cooked to your liking.  Serve with peanut sauce.

  2. Peanut Sauce
  3. Place peanuts in bowl and mill for 2-3 seconds on speed 8.  Set aside

    Chop chilli and garlic for 3 seconds speed 6

    Add oil and cook for 4 minutes, varoma temp on speed 1

    Add peanuts, tamarind pulp, sugar and coconut milk and cook for 20 minutes, 100 degrees, speed soft or until oil separates and floats to the top.  Stir through with spatula to combine and then serve with kebabs. 

Tip

Peanut sauce will keep for 5 days in the fridge.  You can serve the sauce hot or cold.

    I thought it was a bit too lemony for a satay. I found the use of lemongrass a bit tricky too.

    It's a hit!! Just needed to drain off oil as it doesn't look good for your health.

    That's the best satay we have had...... Delicious - thank you Nicky

    We also had a beef and chicken.   I drained some of the oil from the sauce before serving instead of stirring it though.
