Ingredients

Chicken Tikka Tandoori

  • 750 grams 750g boneless chicken breast, 2cm diced
  • 1 quantity of Tandoori Marinade (reserve 2 tablespoons)

Chicken Tikka Sauce

  • 50 grams almonds
  • Small bunch of coriander (so you have about 1 tablespoon when chopped)
  • 1 red capsicum, cut into chunks
  • 2 grape tomatoes halved
  • 300 grams curry puree (see my other recipes)
  • 2 tablespoons tandoori marinade (see my other recipes)
  • 1 tablespoon tandoori paste (see my other recipes)
  • 2 teaspoons tomato puree
  • 100 grams cream

Recipe's preparation

    Chicken Tikka Tandoori
  1. Once you have made the Tandoori Marinade set aside 2 tablespoons for use in the sauce

    Add the chicken and mix for 5 seconds on speed 3

    Refrigerate for a minimum of 6 hours, preferably 24. 

    For best results cook on a bar-b-q to get a more charred result.  If not then cook under a grill or in a pre-heated oven 190 degrees, Gas 5

    Once cooked place in Thermoserver

  2. Chicken Tikka Sauce
  3. Place Almonds in bowl and mill for 10 seconds on speed 8.  Set aside

    Place coriander in TM bowl and chop for 3 seconds on speed 7.  Set aside

    Place red capsicum and tomatoes in TM bowl and chop for 15 seconds on speed 7

    Add curry puree, tandoori marinade, tandoori paste and tomato puree.  Cook for 20 minutes, 100 degrees, speed 1

    Add cream, almonds and coriander and cook for 10 minutes, 100 degrees speed 1

    Pour over chicken

Chicken Tikka Masala is now the national dish in the UK over roast beef and Yorkshire pud and fish and chips. I find this a more authentic style chicken tikka masala.  As chicken tikka is traditionally cooked in a tandoor (clay shaped oven)  It was the Brits that for their tastes required a gravy, hence the masala part was created.  It may seem there are lots of steps to make all the purees, pastes etc really is worth all the steps as the result is the best I have tasted outside an English curry house.  And also once you have the basics made you have them to hand to then quite simply make dishes like this.  Here are the links

    I am desperate to try this recipe as it is one of my favourites.

    However I cant seem to find the links to the "other recipes " that are required when making the paste, puree and marinade.  Can someone please help.

    I am really pleased you have.  Might initially sound a lot of effort but once you have basics done then it couldn't be simpler to knock up a quick curry.  I have more curry recipes using the curry puree to put up.  Will get round to it soon.  tmrc_emoticons.)
