- 1/2 onion quartered
- 1 garlic clove
- 1 tomato, medium
- 2 tablespoons olive oil
- 2 chicken thighs, skin off, boned and chopped 1cm cubes
- 1 Thai Pea Eggplant, handful
- half lemon juiced
- 1 teaspoon Thyme
- salt and pepper to taste
Side dish
- 8 asparagus spears
- 1 red capsicum, sliced in rings

Put onion, garlic and tomato in TM bowl. Chop for 10 seconds on Speed 6.
Add olive oil and saute for 2.5 minutes, Varoma temperature, Speed 1.
Add chopped chicken.
Saute for 2 minutes, "Counter-clockwise operation" , Varoma temperature at Speed 1.
Add remaining ingredients.
Cook 7 minutes, "Counter-clockwise operation" , Varoma temperature at Speed 1.
Place wash asparagus spears and place in Varoma on top of bowl. Steam while chicken dish is cooking.
Side dish
Tip
Plate chicken dish.
Thread asparagus through capsicum rings for presentation.
Serve with steamed rice.
