Ingredients
Peppered Chicken Wings with Wonton and Bok Choy Soup
- 2 cloves garlic, peeled
- 1 portion onion, peeled and halved
- 1.5 litre water
- 30 grams OilveOil, of your choice
- 14 pieces chicken wings, 2 kilo
- 1 teaspoon sesame oil
- 1 dash fish sauce
- 1 pinches salt & pepper
- 1 bunch Bok Choy/Pak Choy, 1/3 bunch
- 1 stalk shallot, sliced
- 1 stalk coriander, chopped
- 1 dashes white pepper, to garnish
- 1 dashes soy sauce, to drizzle
- i some red capsicum small, diced
- 2 litre boiled water, for top up and heat thermoserver
- 1 tablespoon vege stock, TM Stock
- 6 portion dim sims/ wontons, small

1. Place onion and garlic into bowl and chop 2 seconds speed 5. Scrape down sides. add oil and saute 2 minutes speed 1.
2. Assemble Varoma and oil both trays place chicken wings into both trays and season. Set aside.
3. Add water , vege stock, sesame oil, fish sauce, salt and pepper to taste. Place lid on bowl and put Varoma into position. 30 minutes Varoma speed 3. After 30 minutes remove Varoma add boiled water to bowl to bring up to 1.5 litre mark, prick chicken to see if cooked if not repeat above for another 5 minutes or until cooked. When cooked remove Varoma and place chicken wings on a large serving tray. Sprinkle with white pepper (generously) and drizzle with soy sauce. Garnish with Coriander.
4. Place wontons into Tm bowl and again top liquid with boiled water to 1.5 litre mark. cook 10 minutes Varoma speed soft backwards. Boil kettle and fill thermoserver with boiled water and disgaurd. Place chopped Bok Choy and Shallot in thermoserver and pour in liquid and Wontons from TM bowl .

This recipe was nice, i didn't have/nor like dim sim/wontons so added celery and carrot to the broth and it still tasted nice. i put the left over chicken wings in the broth overnight and found the flavour seeped in nicely.
