Ingredients
Dressing
- 1 clove garlic
- 100 grams tahini
- 300 grams honey
- 75 grams apple cider vinegar
- 2 teaspoon Himalayan salt
- 90 grams extra virgin olive oil, (100mL)
Salad
- 60 grams Kale, stalks removed
- 2 --- carrots, (small) peeled, roughly chopped
- 1 --- Beetroot, (medium) peeled, roughly chopped
- sunflower seeds
- tamari

Seeds
Lightly toast your choice of seeds (eg - sunflower, sesame, pepitas) until lightly browned (approx 150'C for 5-10 minutes). Sprinkle with tamari sauce to coat and allow to cool.
Dressing
Chop garlic 3sec/Sp7 scrape down sides of bowl and add remainder of dressing ingredients except olive oil. Measure 100mL of olive oil into a jug. Combine dressing ingredients speed 2. With the motor still running at speed 2 and the MC in place, slowly drizzle the olive oil to create an emulsion. Once all of the olive oil has been drizzled in, transfer all but about 1 tbsp of dressing to a jar - this can be saved to use next time!
Salad
Add kale to the small amount of dressing left in the mixing bowl and chop 2sec/Sp5.
Set aside and add carrot and beetroot to bowl. Chop 1-2sec/Sp5 or until desired consistency is achieved.
Add carrot and beetroot to kale and gently toss through. Top with toasted tamari seeds.
Tip
Serves 1 as a main dish or 2 as a side dish. Can easily be modified to serve more - see below note.
Dressing will keep well in an air tight glass jar in the fridge. It's perfect to use on all kinds of salads.
For a larger quantity, just add 1tbsp dressing and 60g of kale at a time and chop 2sec/sp5.
This salad is really versatile, and you could add anything you like to turn it into a meal - eg:
- Sliced chicken
- Boiled eggs
- Edamame beans
- Sliced red onion
- Avocado
- Shaved parmesan
- Feta
