- 2 clove garlic, peeled
- 30 g olive oil or ghee
- 200 g quinoa, rinsed
- 150 g sweet potato, peeled, diced into 2cm cubes
- 100 g Indian Tikka Paste, From Indian Book
- 500 g coconut milk
- 1 tbsp Stock Concentrate

Add onion and garlic to TMX bowl. Chop Speed 5, 3 seconds.
Add olive oil. Cook speed 2, varoma, 2 minutes.
Add tikka paste to bowl. Cook speed 2, varoma, 1 minute.
Add quinoa, sweet potato and reserved coconut milk and stock paste to bowl. Cook on speed 1, REVERSE, 100 degrees. 25 minutes.
Serve with a sprinkle of nuts, or fresh shallots.

Absolutely delicious, the whole family loved it. I've now made several times and it has to be our favourite dish up to now. Will try with diced lamb one day as I think that would be really tasty.

Sweet potato and quinoa curry - This was so simple and so tasty! A definite make again! I used 60 grams of Patak's Tikka Masala paste (as I don't have the Indian recipe book) and a 400ml tin of coconut cream which I topped up with water to reach the 500ml. I got 3 lunch-sized serves out of it, I dished it up with raw green beans in the morning and microwaved at work for lunch, delicious!

Amazing - and super quick - - perfect Sunday night dinner. I didn't have any tikka paste o I used store bought which was salty enough so I left out the stock paste instead.
