Ingredients
- 200g rice
- bok choy, Chopped
- 2 carrots, Cut into matchsticks
- 100g broccoli, Cut into bite sized florets
- 2 tbs palm sugar
- 4 Kaffir lime leaves
- 1 red chilli, Chopped into chunks
- 1 onion, Quartered
- 60g vegetable oil
- 2 tbs red curry paste, Five Tastes brand is vegan
- 100g water
- 2 tbs soy sauce
- 400g coconut milk
- 100g Peanut Butter
- 500g firm tofu, cut into bite sized pieces
- 1 cup firmly packed Thai basil leaves

Method:
- Place 900g of water in tm bowl, 200g of rice in basket. Lock lid.
- Chop carrots, broccoli and bok choy, place in varoma.
- Cook rice and steam veggies at the same time 16 minutes/varoma/speed 2.
- Place veggies in large bowl. Put rice in thermoserver. Empty water from tm bowl.
- Place palm sugar in tm bowl. Grate 5 seconds/speed 5. Set aside.
- Place chilli, onion and lime leaves in tm bowl. Chop 3 seconds/speed 6. Scrape down sides.
- Add vegetable oil and curry paste into the TM bowl and saute for 4 minutes/varoma/speed 1 MC off.
- Add palm sugar, soy sauce, water and coconut milk and cook for 4 minutes/varoma/speed 1 MC off.
- Insert Butterfly and add peanut butter, tofu and basil and cook for 2 minutes/varoma/reverse + soft speed.
- Add tofu mix to the steamed veggies in the bowl, gently mix to combine.
- Serve with rice. Enjoy!

Delicious. I didn't include the water as I was worried the sauce would be too thin. The consistency was good...if anything I could have held back some coconut milk.
Could you use chicken instead of tofu? I’m not vegan!

When shredding the Palm sugar, make sure the bowl has cooled down before adding. My bowl was still hot and the sugar just stuck to it and was hard to get out!
We loved this!. I couldn't find a vegan thai curry paste so made the cookidoo version. Next time I'll leave out the water and 1/4 of the coconut milk

Loved this dish so much!! Flavours were outstanding! We didn’t have bok choy, so threw in some cauliflower and stir fried tofu before adding.
