Ingredients

Vegan peanut lentil curry (adapted from @anettvelsberg)

  • 4 cloves garlic
  • 2.5 centimetres ginger
  • 25 g coconut oil
  • 1 teaspoon coriander, Ground
  • 1 teaspoon cumin, Ground
  • 2 teaspoons curry powder, Ground
  • 1 teaspoon turmeric, Ground
  • 7 leaves Curry Leaves, Fresh
  • 200 g red lentils
  • 300 g water
  • 1 tablespoon vegetable stock
  • 1 can tomatoes, Crushed
  • 1 can coconut milk
  • 35 g Peanut Butter
  • 1/4 Fresh lime, Juice only
  • salt, To taste
  • pepper, To taste

Recipe's preparation

  1. 1. Add garlic and ginger to bowl and chop / 3 sec / speed 7. Scrape down sides.

    2. Add coconut oil, coriander, cumin, curry powder, tumeric and saute varoma / 3 mins / speed 1.

    3. Add curry leaves, lentils, water, stock, tomatoes and cook 100 degrees / 20 mins / Counter-clockwise operation"Counter-clockwise operation" speed 1.

    4. Add coconut milk, peanut butter and cook 100 degrees / 5 mins /Counter-clockwise operation"Counter-clockwise operation" speed 1.

    5. Season with lime juice, salt and pepper. Serve with rice.
