Ingredients
Vegan peanut lentil curry (adapted from @anettvelsberg)
- 4 cloves garlic
- 2.5 centimetres ginger
- 25 g coconut oil
- 1 teaspoon coriander, Ground
- 1 teaspoon cumin, Ground
- 2 teaspoons curry powder, Ground
- 1 teaspoon turmeric, Ground
- 7 leaves Curry Leaves, Fresh
- 200 g red lentils
- 300 g water
- 1 tablespoon vegetable stock
- 1 can tomatoes, Crushed
- 1 can coconut milk
- 35 g Peanut Butter
- 1/4 Fresh lime, Juice only
- salt, To taste
- pepper, To taste

- 1. Add garlic and ginger to bowl and chop / 3 sec / speed 7. Scrape down sides.
2. Add coconut oil, coriander, cumin, curry powder, tumeric and saute varoma / 3 mins / speed 1.
3. Add curry leaves, lentils, water, stock, tomatoes and cook 100 degrees / 20 mins / "Counter-clockwise operation" speed 1.
4. Add coconut milk, peanut butter and cook 100 degrees / 5 mins /"Counter-clockwise operation" speed 1.
5. Season with lime juice, salt and pepper. Serve with rice.

Yumm!! And so easy!
Delicious, quick and easy! Even tastier the next day. I added baby spinach in at step 4 and served with brown rice. Yum, will be a regular!
