Ingredients
To make the fritters you'll need
- 1 bunch fresh chives
- 2 sprigs fresh basil
- 1 carrot
- 1 zucchini
- 1/2 red capsicum
- 1 tomato, remove seeds
- 100 grams goats fetta, crumbled
- 200 grams gluten free flour
- 1/2 tablespoon baking powder
- 125 grams rice milk, (or milk of your choice)
- 3 free range eggs

Chop herbs 3 sec, speed 7
Add carrot and chop 3 sec, speed 4
Add zucchini, capsicum and tomato and chop 3 secs, speed 3
Add remaining ingredients, mix 10 secs, "Counter-clockwise operation" speed 4
Spray frying pan with olive oil, pre-heat on medium
Add heaped spoonfuls to pan
Cook approximately 3 minutes each side or until golden brown and they have risen slightly.
Serve with fresh salad and pesto

Tip
These are gluten free and dairy free. However you can easily substitute flour or dairy/other non dairy options such as parmasen cheese or cow's feta.

Very yummy but a bit n the bland side. I added sage and paprika. Will add more next time to pimp them up a bit more. A very perfect low FODMAP fritter.
These were a little plain undressed with salad I found, however the next day had them cold with some home made tomato relish and was delish.
The only problem with these is that I can't stop eating them
Very nice, I also added salt and pepper. I actually preferred mine cold for lunch the next day with whole egg mayo spread on top. Yummy.
Thank you! These are the first fritters I've made that haven't fallen apart! Taste good, served it with a bit of homemade Mayo for a little more flavour. Used spelt flour and duck eggs.

My four and two year old boys loved these. I chopped up the veggies finer and used regulat milk and flour. They are like veggies pikelets. My husband and I loved them too.
This was a great versatile recipe - I used the bottom half just to make the batter and added leftover roast meat and some steamed veges. As a fritter recipe, this was fabulous. Nice and thick and made a delicioius batter. Thanks!!! It's now my 'go to' recipe when we have leftover meat!!!!
I have never before in my life been able to perfect the humble fritter, until now! This is a fabulous recipe and the fritters turned out beautifully. I chopped my vegies a little longer so they were finer for the kids and they loved them. Noone in my household has allergies so I used normal cow's milk, regular plain flour and danish feta. I'll most definitely be making these again! So good!!!!!!!!
