Ingredients

salad dressing

  • 20g olive oil, 0r nut oil
  • 1tsp lemon juice
  • 1tsp piece ginger, to taste
  • 1/2tsp salt
  • 1/4tsp black pepper ground
  • 1/2tsp sugar

salad

  • bunch kale leaf, stalk removed, i used tuscan black
  • 1 pear sliced
  • 1 Lebanese cucumber, sliced
  • 2tbs dried cranberries
  • 2tbs sliced almonds tst

Recipe's preparation

    dressing
  1. put everything in bowl mix 7secs/speed7 scrape down

  2.  add kale to bowl (i chopped in half) use spatula to push down chop 3-4 secs speed 5 you do not want to fine.then mix on speed soft/rev/for 2mins,this massages the kale and tenderizes it and makes sure the dressing covers it.

     i tipped into bowl and mixed through rest ingrediants and serve

    top with tst almonds just before serving

Tip

I converted this recipe from a recipe on internet jane spice she also added tofu

    Jashyboo: The only other Kale salad I have had is from Top Juice which I absolutely love! So next time I will try your recipe method but apply the below ingredients/dressing from Top Juice (minus the Quinoa because I'm lazy)... perhaps lime juice is the kicker I was seeking... or a combo of lemon and lime.. I shall experiment!

    I like the salad but outside of popular belief here, I'm not sold on the dressing. I found the taste of ginger very out of place and I only put 1/2 a tsp in. I think minced garlic would go better for my personal tastes. Other than that, I still found the flavour of the dressing very subtle and underwhelming. To me a dressing pretty much makes the salad and I was expecting something more flavourful. I did try adding a bit more lemon juice, mince garlic, salt, pepper and dijon mustard but something still seemed like it was missing. I'm certainly not a cook and cant tell you what flavours would go together but I just know that my tastebuds were left wanting something more although I don't know what that is >_< ... the salad definitely didnt go to waste and i'm still eating it and enjoying it, it's just not wow'ing me. I am very grateful for the method of this recipe which is helping me to appreciate Kale a lot more than I used to. Thank you for your recipe tmrc_emoticons.-)

    Really delicious! added chopped radish, fennel, apple and cucumber and served with smoked trout

    This was delicious. I added cinnamon roasted pumpkin and marinated feta and left out thecraisins but used toasted pinenuts. So many compliments on dinner tmrc_emoticons.) thank you.

    Thankyou for the recipe which I modified a little based on the ingredients I had at home. I blitzed the zest of half a lemon with the ginger first then added all the other dressing ingredients including the juice of a whole lemon. After the Kale had been 'massaged' with the dressing,  I tipped it all out into a large salad bowl, added half a cup of toasted almond slivers and some shaved parmesan (I didn't have any cranberries or cucumber). Simple and absolutely delicious  tmrc_emoticons.)
